Broccoli Cheddar Soup (Panera like) =================================== Ingredients: 3 cups broccoli florets (1 large broccoli bunch) 1 cup shredded carrots (1 large carrot, julienned) 1/2 medium onion diced 3 tbsp butter 3 tbsp flour (heaping) 2 cups chicken broth 1 cup water 1 1/2 cups half and half 8 oz Velveeta Cheese 1 cup shredded cheddar cheese 1/2 Tbsp prepared yellow mustard 1/2 Tbsp salt 1 1/2 Tbsp non-GMO Chicken bouillon powder 1/4 tsp ground black pepper 1/4 tsp paprika Instructions: 1) Prepare ingredients. Dice, chop, and julienne vegetables. 2) In a large saucepan, sauté the onion in 3 tbsp of butter over medium heat until browned. 3) Add the flour and stir until flour incorporates into the butter. 4) Add the broth, water, and half-and-half, whisking until the mixture thickens (about 8 min.) 5) Then add the broccoli and carrots and continue to simmer over medium-low heat until tender (10-15 minutes). 6) Stir in the yellow mustard, salt, bouillon powder, black pepper, and paprika. 7) Then add the Velveeta and melt. 8) Turn off the heat and stir in the shredded cheese.
